I've mostly avoided having coffee anywhere in fact so as to not appear too snobbish or rude as I fear I can come across in these situations.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;However, while the quality is still slowly growing up, there are some hidden gems that really seem to care and have passion to bring some of the coffee culture out here. I stopped in one little cafe in Moncton, NB, expecting pre-ground espresso in an enormous cup and was pleasantly surprised to get a decent cappuccino (granted probably closer to 10 oz so hardly a trad. size). The place was very cute, called "Laundromat" and definitely had more of a late night espresso and lounge feel to it than a morning cafe; I don't think they actually open until 10 either. The barista flushed the machine (an old Francis I believe? I'm not a machine buff like some of you out there), and ground the shot just before pulling it. A local roaster again from NB though I didn't get the name, but some really nice cocoa notes coming through, and minimal roastiness.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;I avoided any sort of coffee on PEI but was excited to get to Halifax to visit my friends Zane and Alexis. Zane works at arguably the best cafe in the Maritimes, Steve-O-Reno's. He's the 49th rep. out here so I was treated to a nice press my first day; a Tanzania Micro-Lot Karmaro and a lovely little Piccolo latte (I miss my little P&amp;amp;S macc's, so small and sweet!). Some nice little baking as well. &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Zane is also in the process of opening his own little cafe over in Dartmouth with a local baker. He's getting in a Mirage and will be carrying 49th as well. It's looking like it will be a really great spot for the Halifax area!&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Other places I was privileged to check out while here were: Just Us! Cafe - a local fair-trade, justice (get it? Just us... justice...) type of cafe, JavaBlend - a local roaster who has been roasting since 1938 with a super friendly, and passionate owner, and Smiling Goat Organic Espresso Bar - the only place this far east with a Clover.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;I'm passing through Montreal next and I have to say that I am very excited to go out to Myriad and see what Anthony Bender's doing there. Part 1 of 2</title><content type='html'>&lt;div&gt;I was making a Sumatra Blue Batak Clover for a customer the other day and he asked me a really difficult question. And I felt like the biggest coffee loser when I didn't know the answer. The question: Where is Sumatra?&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Oops. I stared at him blankly. It's a tropical island that is the largest exporter of coffee from Indonesia. Indonesia is the 4th largest exporter in the world exporting about 271 000 tons of coffee each year. However, we're only interested in about 25% of this which is of the arabica plant.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Traditionally, Sumatran coffee is known for being full-bodied, earthy with a balanced acidity. It can also have notes of tobacco and some floral, tropical flavours as well. &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;I'm going to delve a bit further into the regions and the processing of Sumatra coffees in part two, so stick around! &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Feel free to post your questions and I'll try my best to find out the answers. In some ways, and perhaps this is just a result of being in school for 8 months, it feels like since last summer, the PRBC and Barista Jam, that the community has lost a bit of its connectivity. There are definitely connections being formed among the coffee geeks in Calgary but is it growing up more, or leaving people behind?  How is community really created among those who love coffee?&lt;br /&gt;&lt;br /&gt;There are days I come into Kawa and I often see this one guy in there at the same time I am. I think I've met him before, and I rememeber seeing him at the pre-competition barista jam last year. Obviously he has an interest in the community, in coffee. Where is he connection and why does he continue to frequent the best cafes in the city?&lt;br /&gt;&lt;br /&gt;Is it possible that we have created a sort-of "exclusive" inner-circe that only those we approve can enter in to? I would hate for that to be the case. In my opinion coffee is hugely inclusive, allowing everyone to come in and enjoy it at different levels of expertise, building friendships and community along the way. I think that I can often exclude or look down on those people or baristas who I don't feel know as much as I do. This isn't fair and it isn't right at all.&lt;br /&gt;&lt;br /&gt;These are just some of my thoughts because building community among anyone who wants to participate in the coffee quest is an important part of the experience. I didn't start drinking coffee because I was the most exciting thing I'd ever tasted. Sure, I think that now, but in the beginning I loved the community. Connecting with people. Isn't that in some ways what drinking coffee is all about? It's not worth just being a coffee snob in pursuit of a "god-shot" if there aren't some sort of relationships formed along the way. Community is coffee. But how does it work to bring together so many people from different viewpoints and create a tight-knit community? Mostly I feel that I couldn't have anything to say that would be new or interesting to the coffee community, and partly I have a had a lack of time to try to come up with something that would be. So, my only consolation - if there are people out there who might be interested in some of my real coffee musings - is that I will be done the semester in a few weeks at which time I am prepared to make a concerted effort at improving this blog. And also keeping it coffee and food focused instead of all across the board.&lt;br /&gt;&lt;br /&gt;I thought I would try asking a question though, if anyone wanted to know my views or thoughts on any one subject in particular just post your own question here.&lt;br /&gt;&lt;br /&gt;This weekend I will try my hand at making up my own ice cream recipe. This was my favourite that I poured. Now as much as this excites me, I can never decide how I want to spend it. &lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;So this year I will ask the people who still check this blog (being Nat, Ben, and Jason probably... are there more of you out there!?). &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;It started with me wanting to go to Nectar for desserts, however, they won't seat more than 6 at a table - and obviously I have many more than 6 that I would love to eat dessert with! Then I though about booking the harvest table at FARM because it happens to be delicious there. This costs $35 a person though and many, many friends are students and have no funds for this - really this includes myself but on a birthday I always make exceptions for good food. Or I thought perhaps it would be great fun to meet at Raw Bar for dessert and martinis. Has anyone had a good experience there? Some of the tomfoolery that went on was: staff awards (the Feesebs), a latte art throwdown, a lot of cookies, very ugly sweaters, and very silly karaoke.&lt;/div&gt;&lt;div style="text-align: left; padding: 3px;"&gt;I think I will spare all the details because the pictures really speak for themselves! However, we most certainly dominated Ducky's Karaoke last night. Some highlights: Mike's "Hero" by Enrique, Jeremy's Mariah Carey "I'll Be There", Sebastian's "Give It Away", etc, etc. &lt;/div&gt;&lt;div style="text-align: left; padding: 3px;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: left; padding: 3px;"&gt;You kids you skipped out on karaoke! Oh the stories and fun times you missed.&lt;/div&gt;&lt;div style="text-align: left; padding: 3px;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: left; padding: 3px;"&gt;And this morning I woke up to make myself a beautiful cup from Will and Grace Farms. For me, as soon as classes are over, although, I feel as though they should be finished with already. Srsly.&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;In more joyous news, we have the most fabulous, glory-be, celebration worthy coffee in right now. Well, one anyway, as choosing a favourite coffee is in some ways like choosing a favourite child, frowned upon and seldom practiced. I'm talking about &lt;a href="http://www.novocoffee.com"&gt;Novo's&lt;/a&gt; Ethiopia Aricha 11. This coffee is like that best friend who surprises you with bursts of "flavour" every time you hang out. HUGE blueberry, sooo smooth, and seriously, this coffee can hardly do any wrong. Please, please, if you get an opportunity, come out soon to P&amp;amp;S and get your hands on a mug of this elixir before it's gone. Trust me, Aricha will definitely add to your holiday experience.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Also, fellow baristi, have you noticed – as Phil and I were discussing today – that when you are pouring rosettas like a rockstar, that is the one day you decide to not bring your camera? Fair friends, it seems to be the sad state of things as today I found myself in this position. Believe me, it doesn't happen often. Either that I'm without my camera or pouring as solidly as I was. At least I feel more prepared for the annual P&amp;amp;S xmas throwdown at our party next week. I think I will often fair well in these comps but I will need a little luck going against the likes of Ben, Will, Sebastian, and Phil. Well a call from your boss saying that &lt;a href="http://shop.squaremilecoffee.com/"&gt;Square Mile Coffee&lt;/a&gt; just came in and it's all dialed and ready to taste!&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;So I hopped on my bike, and skirted over to the market for what is sure to be one of the best roasters around with 2 world champions and a world cupping champion on board. However, my being a little late getting over there I got the last shot left which wasn't the most brilliant shot the guys had pulled (as it had sat for a few minutes...), it was still quite delicious and I can't wait to try it again (in a cap too!). &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;I was there in perfect time for the second batch of coffee to arrive in the form of more 'spro, and more origins. Of course we pulled the Los Luchadores (the warriors) Pacamara single origin 'spro. One of the more interesting shots I have tried. While it's fresh on my mind, I definitely got that olive savoury flavour they put on the bag balanced out with a touch of - in my humble palate - buttery, caramel-like sweetness. In a cappuccino it was almost like a sweet and creamy roasted veg soup. I just couldn't get past that olive taste though. Perhaps because I'm not an olive fan in real life I'm not so sure how I feel about it coming through in my coffee. This coffee definitely impressed me though with a great balance between that salty, savoury balanced sweetness. &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Needless to say, I can't wait to try their other offerings. One of my favourite things in the year is when we get that first hit of snow and everything changes! It gets me so excited about Christmas and just winter in general. No matter what anyone says, you can't be living in Calgary without some - even hidden - appreciation for the snow.&lt;br /&gt;&lt;br /&gt;Not only is today the first real snow of the year, it is also a big day for the election going on in the US. I am not going to go into any big commentary on this, only say that whatever the result the next few months in the US will be ones to watch. I think in general many Canadians I know are more interested in this election than our own. Could this be because the US election has just as much of an effect on our country as our own politics? Just thinking out loud here...&lt;br /&gt;&lt;br /&gt;Anyone else out there appreciating this snow as much as I am? There is so much to see and eat and experience I am not sure how we did so much in a matter of days! I thought instead of writing some big convoluted blurb on what the experience was like I would just highlight some amazing parts for me. This guy has got it right! I am sure that Jason would be able to give you a much more apt description of what goes on in his cooking and how he pushes the boundaries of fine cuisine but for me it was all about taste and flavour. And I mean flavour of the whole atmosphere! We got to the restaurant at 7:30 and wasted no time getting some wine and a few appetizers. This is when I had my fateful try of the fois gras. Fateful for the duck, but delicious for me! In the end, I had an amazing Fois Gras Poutine that would stop most people's hearts and I couldn't resist ordering the Creme Brulee for dessert (though it was a little over torched... does that make sense?).&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Also to note about Montreal food:&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;- I will never look at a croissant the same way again after eating the creamy, crunchy, buttery ones there.&lt;/div&gt;&lt;div&gt;- The best cafe in Montreal is currently &lt;a href="http://www.cafesanteveritas.com/"&gt;Cafe Sante Veritas&lt;/a&gt; right in Old Montreal. They also had the best paninis! Unfortunately though, as a whole, Calgary's coffee scene is much more present and delicious than what I saw in Montreal...&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-weight: bold; "&gt;CNBC&lt;/span&gt;&lt;/div&gt;&lt;div&gt;The whole reason I even skipped class for a week to go to Montreal was, as most of you know, to watch Phil and others in the &lt;a href="http://www.coffeeteashow.ca/home.html"&gt;Canadian National Barista Championships&lt;/a&gt;. This was a lot of fun! I haven't been out other years, but the caliber of the baristas who competed was amazing! And for a nerd like me the competitions were so interesting and amazing to watch. &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;/div&gt;&lt;/div&gt;&lt;a onblur="try {parent.deselectBloggerImageGracefully();} catch(e) {}" href="http://farm4.static.flickr.com/3236/2987251856_ef9c62fb0e.jpg"&gt;&lt;img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 500px; height: 334px;" src="http://farm4.static.flickr.com/3236/2987251856_ef9c62fb0e.jpg" border="0" alt="" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;div&gt;Thoughts on the competitors:&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;a href="http://philsebastian.com/"&gt;Phil Robertson&lt;/a&gt; - I work for this guy, was trained by this guy, and seriously thought he did SO amazing. His sig drink was like drinking fine, coffeed up, unprocessed Nutella. In fact, I ate so much of his leftover drink at work one night that I made myself actually nauseous. And I think it may have been worth it.&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;a href="http://www.jjbeancoffee.com/"&gt;Spencer Viehweger&lt;/a&gt; - It was funny because when I met Spencer I realized a funny coincidence. I had met him years ago when I worked at Java Jamboree and actually showed him the place for the first time! He looked VERY nervous throughout his presentation but really impressed the judges and finished less than 10 points behind Sammy. I think Sammy's presentation was so smooth from start to finish, and that Beloya in his 'spro really couldn't hurt either. I tried the 49th roast of this coffee earlier in the year and was duly impressed.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;a href="http://www.fratellocoffee.com/"&gt;Joel May&lt;/a&gt; - Calgary really represented at Nationals this year which may have surprised a lot of people. Joel seemed to have a lot of fun during his presentation and had a fairly smooth ride throughout. Though he, like some of the others, rushed at the end to finish up those sig drinks! Pulled out a nice 3rd finish though! &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;/div&gt;&lt;div&gt;&lt;a onblur="try {parent.deselectBloggerImageGracefully();} catch(e) {}" href="http://farm4.static.flickr.com/3145/2973397978_a64015dc8a.jpg"&gt;&lt;img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 500px; height: 334px;" src="http://farm4.static.flickr.com/3145/2973397978_a64015dc8a.jpg" border="0" alt="" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;div style="text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;a href="http://www.cafemyriade.com/"&gt;Anthony Bender&lt;/a&gt; - I only met Anthony briefly at the impromptu throwdown (which is a story for another day...) and he seems like a super nice guy. And in fact, Anthony won the other contestants approval as well with a "Mr. Congeniality" award. I thought his presentation was really relaxed and the most personable of all the 6. And he did so well making it to the finals with a cafe to open the same week!&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;a href="http://www.transcendcoffee.com/"&gt;Chad Moss&lt;/a&gt; - Another great representation from Alberta, Chad from Transcend seemed relaxed and confident as he went through his routine. His was actually one of the few 'spros I got the opportunity to try. An interesting shot though I thought the brightness (of the fruit he described?) may have overtaken it. I wouldn't go by my unexperienced palate though, the judges placed him at a solid 4th place.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Overall the difference in points between all 6 of the competitors was so very close. Sammy kept the title in the Artigiano family but it was so close. A great show all around and I can't wait until next year in Vancouver. Should be super interesting with so many new and amazing talent popping up all over the country! The comp took awhile and I did feel a bit bad for keeping my Mom waiting around after as I cornered Stephen Morrissey to be a fan. &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-weight: bold;"&gt;Showshowshowdown&lt;/span&gt;&lt;/div&gt;&lt;div&gt;A clip of some of the pours (including mine) at the throwdown that took place while we waited for the judges. on 17th Ave. I talked with a girl there about making my own &lt;a href="http://en.wikipedia.org/wiki/Cr%C3%A8me_fra%C3%AEche"&gt;creme fraiche&lt;/a&gt;. So the other night I did and it tastes amazing! I think I will play around with using different recipes for it. Hopefully soon I will also be able to make my own yogurt too!&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Work at the market this weekend was hectic as always but especially so with &lt;a href="http://www.philsebastian.com/"&gt;Phil and Sebastian&lt;/a&gt; preparing to head to the Canadian Barista Championships. I think everyone is pretty excited to head out to Montreal, including my Mom! I love the look of a beautifully defined crema ring around the leaves but lately I feel as though I either get the ring or the big leaves. I'm still working on making all the elements work together into the "Elyse" style of pour.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;And I'm out. While I may have a few fatal flaws (like any good character does) namely, my tendency to be 15 minutes late for everything in life (which I am well aware of and here's hoping on the way to recovery from), I have passion for whatever I do. And if I am doing something without passion, whether it be coffee, dancing, worship, photography, or writing a blog, I throw myself into it until the passion fills me.&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Today, I was passionate about the coffee. I dialed in the 'spro this morning and there was this need in me to make it the best I knew how. I may not be as adept as some of the talent working behind the counters of Phil &amp;amp; Sebastian, but I am quite determined to join the ranks of the espresso elite. So, I tasted, and spat, and tasted and spat, and tasted some more, and spat some more, until (with a bit of help from the guys, Ben and Jason) I was ready to take on what was sure to be the &lt;span class="Apple-style-span" style="font-weight: bold;"&gt;busiest&lt;/span&gt; morning I had ever worked at the shop. (Which indeed, it was, by the way.) And the espresso? Tonight however, I planned myself the most delicious meal and I have to say that it was well worth the extra effort!&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-style: italic;"&gt;The Main Course (alright, there was only one)&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Steamed Asparagus with Olive Oil and Crumbled Bleu Cheese&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Glazed Basil Gold Potatoes with Green Onion&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Braised Steak with Chutney Marinade&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;---&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;It is only a week now until my whirlwind trip to Montreal with my mom. The Canadian Barista Championships will prove to be a great time with friends and the chance to see so many amazing baristas show off their skillz. Calgary will be well represented by my own boss, &lt;a href="http://philsebastian.com/"&gt;Phil Robertson&lt;/a&gt;, and &lt;a href="http://www.fratellocoffee.com/"&gt;Joel May&lt;/a&gt; of Fratello Coffee. I'll look forward to seeing some amazing talent out of Vancouver as well with &lt;a href="http://www.caffeartigiano.com/"&gt;Sammy Piccolo&lt;/a&gt; in the running and &lt;a href="http://www.jjbeancoffee.com/"&gt;Spencer Viehweger&lt;/a&gt; of JJ Bean. Truly, everyone in the lineup has copious talent! As a bonus, it all goes down in Montreal, as "Europe" as we get in Canada. As of 10 minutes, I am no longer a Facebooker. But my recovery has just started. When I went to "permanently" delete my account, I was informed that I still had 14 days to log-in and save my profile before it would be actually deleted. I am on day 1. 14 days is the time it takes to break a habit right? So this should be no sweat right?&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;The only comfort I get from this is the delicious cup of Guatemalan I will make for myself in the morning with the time it took me to check Facebook.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Also, I think I am going to start a group.
